The only thing you can really count on if it is an unscouted player would be the combine score. And only a few positions come to mind which would lead to probably a 75+ OVR without knowing the other stats. That being said I haven't seen any undrafted gems in my first two seasons of my CFM.
The undrafted prospects should be available to scout though, but they aren't always available to scout every week. A pool of them alternate.
OLine and DLine rely heavily on strength and acceleration. Bench press and 3 cone are good indicators. And undrafted 4-3 run stoppers that have those two measurables checking out will be a highly rated DT if you switch their position. Blocking TEs will usually be highly rated if they have a good bench press.
