This is what I'm thinking...
My first option would be to raise Holding Penalties slightly, maybe one notch. Doing so decreases the number of huge holes and huge plays by RBs. Big gains get called back due to Holding. But, that means more Holding Pens on KO and Punt returns too.
My next thought is to raise Rush Reaction by one. I already raised it to 61 from 60. And I know already that raising it to 63 is too high. At 63, most running plays went for losses. IRL running plays should almost never go for negative yards.
And then, I'm considering raising Speed Threshold maybe to 75. This supposedly lowers the number of big plays.
And lastly, I'm wondering what happens if I raise my Fatigue from 60 to 65? Maybe RBs don't get as many carries.
The bottomline is that I don't want to alter the basic CPU settings. I'm trying to make changes using the perifrials (sic?) such as Fatigue, Speed Threshold, or Penalties to achieve any changes.

Passing Stats

Ryan 48 Atts for 550

Rushing

S Jackson 37 for 200

Observations;
Offense is obviously way ahead of defense after week one.
So I will make the following changes
1) Increase Holding Penalties to 55
2) Speed threshold to 75
3) Fatigue up to 70

I am holding off changing the Rush or Pass Reaction sliders for this week. If trend continues, I will change them in week three.

Actually, averaging out the scores... It comes out to 27.4 per team. Thats not bad. However, I'm still making the changes.

I'm using Broadcast Cam. And so far as game speed, I dunno, I've just always used Very Slow, it feels more natural.
And if I read other posts correctly, it sounds as if Madden 12 needs slower speeds in order for various aspects of the game to be more prominent.

Why must you control one team at the beginning? I ask because I don't and I feel one team has the sliders and the other doesn't but I think I am just crazy.

Good question, why control one team in the beginning. Will be getting my own Madden 12 PS3 copy soon and can't wait to play my Seahawk franchise via cpu vs cpu.

You're not going crazy. In order for each team to have the same profile, you have to create two profiles with identical settings and start the game with two controllers with one on each team.
