I've tried the home menu, tried starting a Play Now game to edit it there... What am I missing?

Ugh. Got it. It's not in Options, it's in Presentation Options, but only in-game. Annoying. Derp.

Go to presentation in your settings, camera, and you'll see four custom slots. From there you can customize your camera...
