I noticed that start today is broken. The further you simulate into the season, everyone's overalls keep decreasing and that's with default sliders.

I'm seeing the same thing. It looks like it's treating progression and regression differently.

I don’t even see the option of start today anymore. It used to show up at the when should the season start menu.

I found it. It is at the main menu. But can you not use a custom roster anymore?

You can not use custom rosters for Playoffs either.
