I had a good set of sliders for Ncaa 12 and wondered if some of them are pretty much the same as 13 like QB accuracy is usually about 35 to 40 or are the sliders pretty different on 13?

They are different due to the read and react system and other reasons. The CPU Pass Cov slider is reversed. 100 equals loose coverage and 0 equals blanket coverage. The QB Accuracy slider is broken in Play Now and Dynasty mode for both the USER and CPU

Also, what are some good sliders for 12 that aren't overly challenging (preferably on AA or Varsity)?

None of these problems destroy the fun of running a perfect option play, but they do take you out of what should be an immersive experience."....
