I'm using very slow and as an offensive coordinator I think that's perfect, since offense is such a breeze. Made it to level 6 by the end of year two. As a defensive coordinator I probably wouldn't choose very slow

For my dynasty I did very slow and was very happy with it. It seems to be the most realistic setting when comparing to real life.
