I just bought the game again(got to wait for it to ship to me though!@!), and found these updated rosters. Which rosters of the ones are most playable(least issues, salary cap, team management, and gameplay wise)?

Obviously we can edit the roster going into a career mode but is it possible to edit an incoming draft class?

Most likely its an issue of the ID number on the save not matching your PS3's profile ID number. You can "fix" it with the Bruteforce program. Jlech1805's "Your Own Custom Roster" thread would be the best place to go to get instructions on the process and a download link for Bruteforce- google wasn't giving me any valid dls when I tried a couple weeks ago- if you're interested.
