I haven't looked into the endzone celebrations on XBox, but to high step into the endzone, hold the left trigger down, and push up, down, left, or right on the right analog stick.

In addition to grip damage, extreme temperature can effect the epoxy used to hold the heads to the shafts. Just another thing to take into consideration.

You can also change the direction you want the play to go at the line of scrimmage, without changing the whole formation. I don't know the gamecube controls, but for xbox, you hit the "hot route"...
