The bad thing is that I quit the game to avoid him losing his redshirt. Then when I reloaded my dynasty, it shows his redshirt gone, even though technically, he never played a down because I quit that game without saving.

What he said. As I stated earlier (and have verified many times) if a player does not get any stats, he will get a redshirt.

IE. If you have a SR kicker and a true FR punter, you might want to redshirt the punter and have your kicker kick and punt. In the preseason, you are not allowed to redshirt your punter because he's your only one. If you bury him on the depth chart, however, and he gets no stats, then at the beginning of the next season he will be a FR(RS).

In the OP's example, if his QB never gets any stats, he will be redshirted.
