I have seen similar though, one game I am in a shootout, then the next the defense is stingy.

Yep I had the same experience. There's so many ratings and attributes for players and coaches. I'm good so long as they feel ratings driven and every game isn't a fist fight when it shouldn't be if I have better players. My tough game was a rivalry so it all made sense. The slider changes have me back into the game post patch!

Yeah my first game with the new settings was on the road against a 5-0 team. I had a 14-0 lead after the first quarter then couldn’t do anything. I was held to 2 field goals in the second half and overthrew my receiver in the end zone on what could have tied the game with a 2 point conversion. I ended up losing 28-20.
Second game was a different story. I was able to completely shut down the CPU running game and was able to run nickel and dime defenses for 3 quarters in a 42-10 rout.

Still very random for me. One game yesterday I had 3 total between both teams, then in my game today I had 8.
