Or another example if I decide that the current champion wants to fight in another weight class and "vacates" the belt.. That would be awesome if possible.

I hate to say it but the more I play this demo the more I realize this game is terrible with unresponsive controls. It hurts me to say this because I am a huge ufc fan but I think I will be skipping this one. THQ definitely did it better in my opinion

No, he never said that. Every MMA game has had championship fights on Fight Now/Exhibition mode. None of them made it so that the winner would be considered the champ throughout the game. Not saying its not in EA UFC but the Dev's post doesnt confirm that.

No, but you can keep records on a Word Document, or even a notebook.
