First I would suggest to STOP trying to react to pitches down in the zone, if you're looking (and holding your PCI) up in the zone. Just take them. Unless you have two strikes on you, it's ok to take a strike here and there in order to wait for a better pitch to hit, and clearly you're not hitting them well anyway, so stop swinging at them. With 2 strikes, you can expand and make sure you don't strike out, but until then, if it's not in the spot you want, just take it. A lot of the time, the pitches that you think will be low strikes may end up dropping below the zone anyway. The main thing you DON"T want to be doing is moving your PCI really far as the pitch is coming, because like you said, you're gonna move it too far and mess up. Guess an area of the zone and make SMALL corrections if it's close. If it's not close, take it. Don't move your PCI all over the dang place, that's how you make weak contact.
If you're still having problems after that, bump the Solid Hits slider up a little. No one will judge you.

As for your second question, I'm 99% sure that you can only see YOUR at-bats in that UI. It doesn't show at-bats that were simmed.
