The Mortal Kombat games - this was the first series of games I was really hooked to, probably just for the shock value. They were fun games though.
Duke Nukem 3D - There is a huge hole in my PC gaming library from 1996 to 2004, cuz this game was the only one I felt was worth playing on the PC during that span. I modded the game to death also, probably attributing to its longevity in my eyes quite a bit and increasing my interest in video games in general, and is probably at least a small part of the reason I'm headed down the computer science road.
WWF Attitude, WWF Smackdown, and WWF Smackdown 2: In each of these games, my friends and I had a league of sorts, where we'd each draft wrestlers for our own personal use and make cards, fight for titles, have pay-per-views, and so forth. So much fun we had with these games.
Madden 2001-2003 - Again, played the heck out of these games with friends, in franchise mode.
Metal Gear Solid and Metal Gear Solid 2 - The only truly story-driven games I played, but they are amazing. Both games are brilliant works of art, and Hideo Kojima (the man behind both) is a genius in my eyes.
Guitar Hero - Whenever I see this game, regardless where I am, I play it. I'm hooked to it like a druggie. Most creative and innovative game I've ever played, period.
I guess also any game with any sort of "create-a-..." feature. I bought Rally Cross 2 for the PSX simply because you could make your own race courses, as I did TimeSplitters for the PS2 for the level editor. Any game where one can directly make the fun, I really enjoy.
