I start off on expert with first lvl 1 character and then try to start on torment when I get paragon lvls up, but I am the type who loves challenges and I feel like I always have to have the best loot drops possible for characters range

The way this works is that the gift you earn from a monster isn't actually an identified item yet - its properties don't get determined until the recipient identifies it. And with the way loot works now, that means it's always going to be level-relevant to the recipient, and usually good for their class.
Here's an example. I received a gift chest armor from someone on my friends list (real-life friend, not someone from OS) who is a level 13 Monk. I was 61 at the time I received it. Once I identified it it rolled as a Level 60 legendary armor with loads of Dexterity (exactly what I need in my equipment as a DH). It was much better than what I was currently using.
Obviously, under normal trading circumstances I wouldn't be able to receive a L60-anything from a L13 character (and that is his only character). But this is how the gift thing works, and it's pretty cool.
You can, of course, gift an actual identified item to someone, but yeah, it helps to make sure it's at least relevant to their class.
