        Of course smoking is the way to go, but sometimes that's not an option and this is just another way to cook them.
        When i beer boil, the meat is so tender and juicy that it just falls right off the bone.
        A stout beer adds that smoky flavor and the rub seals in all the juices.

        If you drop ribs in a pot of plain water, yeah its gonna taste gross.
        But I'm not talking about plain water. Thats called a McRib!
        I think you missed my point, boiled ribs are worse in every way, I don't care what you boil them in you won't even come close to matching the flavor and texture a nice long smoke gives ribs. That's the only option when cooking a rib, if you aren't going to do it right why bother at all?

          Have you ever tried to boil ribs in anything other than water?
          Have you ever eaten ribs that were boiled in beer? Or beef stock or with a flavor pouch?

            I have never boiled ribs myself, I'd rather do it right. I have had ribs boiled in just about everything, not beef stock, typically beer with something added. Beer and cajun seasoning, beer and BBQ rub, plain beer, beer and honey, beer and apple juice, cyser tailings (the leftover solids and un-bottleable liquids from a cyser, which is an apple mead). It's amazing how many of these recipes are just "boil in alcohol".

              Well said man.

              This thread is about BBQ'ing. Be it on a grill or smoker. Not in a pot of boiling water, beer, etc.

                Its not so much about boiling as it is about braising.
                You dont boil it like an egg. You braise it almost like a long blanch.

                  Boiled, blanched, braised, stewed, poached, simmered, parboiled, coddled, it's all just different ways of saying you ****ed up a rib.

                        I guess it'd be OK to boil them if I were making a rib broth. Otherwise, you rub em', and cook em' low and slow. No southern pit master is boiling, parboiling or blanching ribs before cooking them. Maybe it's a northern thing?

                          I think that is the key right there!
                          Every region has their own way of cooking ribs.
                          What's done in KC is NEVER done in Memphis and whats done in Memphis is NEVER done in TX.
                          Here, in the Northern Midwest, boiling ribs is pretty common.
                          Just like any method, there is a right way and a wrong way.

                          I went to STl a couple of years ago and ofcourse had to try some ribs.
                          I went to what I expected to be a high end rib joint and their ribs were horrible.
                          They were dry and over spiced.
                          Even doing them the "right" way, you can F them up.

                            I'm from Memphis, and 99 times out of 100, yes, I'd prefer my ribs done on a grill or smoker. However, I know there is more than one way to skin a cat. And not having access to a grill living in my apartment, you have to try different things. I've had boiled ribs. Sure, they weren't AS good as something done the traditional way, but they definitely weren't the worst thing you could do to some ribs.

                              So heres what I'm working with today. Marinated these baby backs for about a day and a half in some robust italian dressing, them put my homemade rub on them for a couple of hours before putting them on the grill.



                              They have been on now for about 2 and half hours. Tossed some of my homemade sauce on them just now and going to let them go for another hour or so. Doing them low and slow, smoking them with some apple and hickory wood chips over an apple juice/apple vinegar mixture.



                              I really gotta get some wood chunks because I've tossed on about 3 packs of these wood chips and they just burn so quickly.
