I really wish I would have sprung for the weber with the kettle catcher. I need to rig-up something.
Alright, so this is what I ate this weekend:

Went to the girlfriend's parents' for a birthday "get together" for her little niece. More importantly her mom fixed the following on the grill and it was goddam magical:
Grilled chicken breast that had been marinaded/seasoned with some pineapple juice and oil...and I don't know what else. Chicken was great. She topped each breast with a slice of provolone cheese.
Grilled pineapple slices.
Toasted hamburger buns.
Bun + spread (cream cheese based - I don't know what she mixed it with, but delicious) + pineapple slide + chicken + bun = Knees buckling goodness.

We did kabobs, steamed shrimp, salad, and corn muffins.
For the kabobs I did 6 skewers with chicken, shrimp, pineapple, and onion. Marinaded the chicken, shrimp, and onion in a lemon-garlic sauce. Sauce might use some tweaking next time, but it was good especially on the shrimp. Pineapples grilled are amazing. It just bursts in your mouth fruit-gusher style. Steamed the shrimp the classic old-bay way. Can't beat that.
For the salad we did a "spring lettuce mix" (romaine, spinach, radicchio, etc) with strawberries, mandarin oranges, sunflower seeds, and mozzarella and topped it with a raspberry vinaigrette.And the corn muffins. These came out really well. We used a cupcake/muffin pan, but didn't have cupcake liners so we just cooking sprayed the pan very well. Sides were nice and brown with a nice bready crust-crunch. Tops and the insides were golden yellow, soft, and moist.

But the winner was Sunday, by far.
Cut up potato chunks and loaded them into a foil envelope we did by using a sheet of foil and folding into the center. Loaded the potatoes with cheese, bacon bits, and butter. Grilled for about an hour. Added sliced green onions once we pulled the pack off the grill. Excellent.
We grilled chicken. Seasoned them with a garlic powder, black pepper, salt, and ground cumin blend. Grilled. For the last couple minutes I put on a peach-chipotle glaze and finished the chicken off.
Chicken was ******* amazing. I'm making the chicken and potatoes again this weekend it was that good.
We also had an ice-cream cake that the girl and I did the day before. Wasn't as hard as I thought it was going to be and it turned out awesome. Kind of rich, but holy hell it was one of the best desserts I've made.

peach preserves, lime juice, chipotle chile, adobo sauce, cilantro - heat enough to melt preserves and blend well
