You dont need one. That link shows how to do it in an oven
Place your beef parcel in a low-slow oven and forget about it for 8 or 9 hours.
(If you’ve got a big slow cooker, you can just drop the brisket in your crock pot on low.) Don’t worry about it. Don’t peek. It will be fine.
Plus, WalMart sells a decent slow cooker for around $30.Comment

Also, If you have a vented oven, you can actually smoke in your oven too. You just add a smoke pack to your oven while the meat cooks.
You gotta have a vented oven though or your house will fill up with smoke.Comment

I am going to get a new tool too. Any recommendations for thermometers? My gut has been good so far on steak, but I had an epic fail on burgers the other day.
Anything wrong with this one?

I'll have to check that out, it's only 25ish bucks.

Indeed! I've got a horrible habit of posting and forgetting to check replies. Ha.
Grilled chicken and pork chops tonight, but they were devoured before any pictures were taken. I'm loving the new Weber. I've always been a gas grill guy, but that's changing quickly.Comment
