    Not sure how I've missed this thread over the years. But I pull the tv and xbox into the backyard screen house, put some meat on the smokey mountain cooker for 8 hours, game, smoke meat and drink my summer vacation away (perk of being a teacher, and for dafly if he sees this, beer, teaching and food this time, no mention of coaching.....whoops).

    I'll certainly be posting pics. Good stuff here.

      Chicken and corn. They're thin sliced chicken breasts. Very good.

        Try the corn without the foil. Much better. Just pull the husks back without tearing them off and pull the silt off. Put the husks back in place and grill. At the end, pull the husks off and brown a little on the grill before serving.

          We wrap in foil with butter, salt and pepper. Can I just do that in the husks?

            Yes. That's how I do it and it's awesome. The char marks on the corn are the bomb.

                No pictures, but pretty successful weekend:

                Friday - grilled two pork tenderloins with pineapple-habernero sauce. Also grilled a foil pouch of chopped potatoes, cheese, bacon bits, and butter. Tenderloin is even better as left-overs - so damn tender.

                Saturday - grilled a couple chicken breasts and made BBQ chicken salad with chopped celery, onion, and red pepper. I used equal parts ranch and BBQ sauce. It works well with a spicy BBQ sauce.

                Monday - Went to the parents and did some T-bones.

                  Grilled a couple filets for me and the wife Sunday afternoon. My steak grilling skills are hit and miss but this time I seemed to nail it. They were awesome! One of these days I'll remember to take some pics.

                    Not 100% grilling, but anyone know of a good cheese to shred onto nachos? I have always used cheddar which has gotten a little old.

                          Firing up the grizzle today for some steaks. The lady is making a red wine reduction with mushroom & onion. Got my Sam Adams Summer Ale (underwhelming IMO) at hand. Baked potatoes on the side, OBVIOUSLY!

                          Getting a hand-me-down grill from my dad when I can secure a vehicle to pick it up in. I'm using a travel size grill and this is a regular size, about 2-3 times what I'm on now. It raised the question of why charcoal grills are circular instead of square/rectangle. My dad cooks veggies and whatnot on these trays, but they're square/rectangle so only one fits on the circular grill. We couldn't figure out why charcoal grills are usually circles and gas grills usually rectangle. I said it's a heating thing? Figured I'd ask some of y'all here.

                              Any tips on cooking a filet in a pan? I usually do ribeye and am confident when I do that, but I am cooking for a girl who wants a leaner cut of meat so I figured I would go with a filet (or maybe NY strip). My normal seasoning consist of kosher salt a couple hours before and some pepper before it goes on. Can you do that with a filet too?

                              Edit: Forget all of that. She got an 18 oz bone in ribeye for us to share. Does a bone in ribeye cook at any different rate than a boneless? I'm thinking I'll just got it off the bone if it's not too hard of a task. It was around $12 so hopefully it's a prime cut.

                                Yeah, I personally just use the salt/pepper type seasoning like you do...

                                IMO steaks don't need to add that much. Should taste good with basic seasoning, it's more about the meat anyways.
