With all due respect, it's tough to know how to help with these types of questions without more specifics. If you can provide more details on what aspects of the game are feeling too easy, you're more likely to get more helpful responses.
For example, are you finding it too easy to dribble and beat the CPU? Maybe try a speed discrepancy. Is it because passing is too easy or is it because you're converting chances at too high a rate? Maybe try pass and shot error changes and beef the CPU keeper. Etc.
Have you tried different assistance settings? I'm not a big fan of FUMA anymore, and there hasn't been a single year that I haven't been able to get the difficulty where it needs to be without going full manual, but even just trying some settings on semi can make the difference. (I'm playing mostly on semi now.)
You might also be like me and need to keep the speed settings (accel, sprint, pass speed) at default or closer to it. Simple fact is FIFA is a game that relies a lot on speed for its difficulty. Dropping those can make it way too easy to predict and exploit the CPU.
And what about jockey assist? Do you have that on? I also play online and find it a bit too easy too, so I also run with the competitor master switch (or whatever it's called) settings turned on as well. You might even want to try playing with Competitor Mode turned on.
Another big thing that isn't usually mentioned in here because it's not specific to sliders is how are you playing your CM? Strict or loose negotiations? Are you playing with a top team or an RTG save? Are you stacking your team with pace or filling your squad with high potential players? Are you making sure that you're developing players realistically and not turning everyone into pacey 5 star skillers? A big one can be don't use training to boost your players. I'll even use press conferences to piss off my team to drop those boosts lol.
It's very easy to exploit CM and build a squad that inevitably makes gameplay too easy, so if you're looking for a greater challenge, make sure you're not only relying on sliders.
