For the issue with the CPU stealing passes, you have the choice of decreasing either the “Hands” attribute slider or the “Play Passing Lanes” tendency slider. “Hands” controls how likely the AI is to successfully steal a pass, whereas “Play Passing Lanes” obviously controls how likely they are to simply attempt to steal a pass.
Since it sounds like your issue is defenders attempting too many steals, I would drop the tendency by about 10 and see from there. If you’re happy with the rate of attempted steals but just don’t like how good they are at always getting their hand on the ball, then drop the Hands slider by 5 and see if that’s enough.
For contested layups (or contested shots all together) missing too often, decrease the Shot Coverage Impact slider by a few until you’re happy with the results. You can also increase the relevant Shot Success sliders (particularly the Inside/Close/Layup/Contact Shot Success) by a few clicks here or there as needed, that’s entirely up to you. Don’t feel like you need to take my slider settings in the OP as gospel, they are always best used as a base to tweak slightly to fit your own skill level and/or preferences.
For the final issue with help defenders (particularly bigs) being too good at helping while also being able to recover and defend the player they rotated off of, that’s kind of just how I like it. Makes the game more difficult and harder to exploit the paint. To make this a little less egregious, I would just lower the Help Defense Strength slider by 5-10 and see how you like it. Hold off on making any changes here, though, until after you’ve tried the first tweaks I mentioned. Toning down the AI ability/frequency of trying to steal passes will inevitably make it easier to pass into the paint, so solving that issue for you might also solve the help defense issue as well.
So yea, try the first couple tweaks and see how you like it. If the help defense is still too good at recovering to defend the open man, then drop the Help Defense Strength slider.
