    So I finally smoked some butt on the grill over Labor Day weekend. I only got 3lbs since it was the first time trying it, so in case I mess up, it won't be too much of a casualty.

    Well I tried to do the an hour (or 2) per pound of meat. However I couldn't get the meat past 150 at one point. After about 10 hours in the smoker, she was finally done. It tasted good, but wasn't as tender as I'd like it to be.

    Should I have stuck with the hour per pound of meat? What are your takes on this? I'd like to try it again this weekend if possible.

      When the meat won't go higher than a certain temp at one point, it's called plateauing, and it can take a while for the temp to move again. There's no set time for smoking meat, it's just one of those things that varies wildly from pit to pit and cut of meat to cut of meat. You just have to let it go until it's done.

        In addition to what Burns said, you can also baste the meat every 30 min or even inject it with its own juiced or a mixture of your own.

        This will help it retain moisture.

          Yup, you hit The Stall. Usually happens around 160 when collagen starts to melt. That's the problem with smoking butts and trying to hit a time window. It'll be done when it's done.

          What was the final temp? That really matters when it comes to tenderness. Pull it at 165 and foil it till it climbs over 200.

            Yeah I figured I hit the stall. So of course I panicked a little. But regardless, it was still good.

            I didn't foil it, something I'll do next time, but I think when I finally checked the final temp when I pulled it, it was like at 203. So that's probably why it wasn't so tender.

            But I threw it back on the grill with some bbq sauce the next day and it tasted amazing... So I must have done something right :P

            Anyways has anyone used a Brinkmann ECB? I want to save money for a WSM, but honestly, I'd rather try something on the cheaper side first before going all out. I've been reading up about it and looking at the mods I can do, and it seems like it can do a decent job. I'm sure it will be better at holding temps than my grill that I use as a smoker now.

            If anyone has had one or used one, or has any advice about one, please let me know!

              I don't normally foil during the stall unless I'm in a hurry. I do 90% of my butts overnight so I'm rarely in a hurry.

              As for the ECB, I went that route and regretted it. I went with an ECB, then an electric smoker before going with a WSM. If I had it to do over, I'd go with the WSM from the get go.

              With an ECB, overnight cooks were a real chore. With the WSM, it's get it to temp and sleep for 6-8 hours. It maintains temps for 8-12 hours easily.

                I will be grilling a pizza tonight.
                I will be sort of cheating because Im ordering a half bake from the local pizza place, then finishing it off on the grill.

                          See thats the problem. I would love to make a UDS. But the prices on clean 55 gallon barrels are so high, I should just save up and get a WSM.

                          I only wanted to get the Brinkmann cause 1, it's cheap and 2, it will beat using my grill as a smoker as that does a horrendous job of keeping temps.

                            You live in Chicago, there HAS to be a place that does reconditioned drums. A reconditioned drum goes for like $40, the equivalent WSM is $400. Heck, a city as big as Chicago you should be able to find a clean used drum on Craigslist.

                              That's what I was thinking too, but nope. Maybe I'm looking in the wrong places.. Maybe I'm just being too paranoid that it's not a food grade barrel so I won't be able to smoke food in it. But I can't seem to find it anywhere in Chicago.

                              I found a place online that ships it, but shipping is over $150.

                                Googling "reconditioned barrel" led me here with the first link and it has half a dozen reconditioned drum distributors, start calling and telling them what you are looking for (55 gallon, unlined, food grade, reconditioned steel drum), if they will sell you one, if you can pick it up, and how much one would be.
