So I finally smoked some butt on the grill over Labor Day weekend. I only got 3lbs since it was the first time trying it, so in case I mess up, it won't be too much of a casualty.
Well I tried to do the an hour (or 2) per pound of meat. However I couldn't get the meat past 150 at one point. After about 10 hours in the smoker, she was finally done. It tasted good, but wasn't as tender as I'd like it to be.
Should I have stuck with the hour per pound of meat? What are your takes on this? I'd like to try it again this weekend if possible.
