Re: Official OS BBQ/Grilling Thread
Judging the 2 will be difficult.
First off, we are going by look and not taste so I'm gonna pick apart the looks.
Please take no offense as they both look great and would be honored to be invited over for dinner!
With that said, VTP's steak looks great, but how was it seasoned if at all?
The steak looks juicy but I see some fat that was not trimmed off. That can be unappealing to some.
The charring looks great and the pairings are nice, although there is no starch and the asparagus looks unseasoned.
Burns' fajitas look great, but again, how was the chicken seasoned if at all?
The tortilla is untoasted/grilled and IMO it should be for a grilling contest.
It looks well balanced but is lacking rice and/or beans.
VTP has more of a complete dish, but Burns dish shows more imagination.
VERY tough call!Comment

Re: Official OS BBQ/Grilling Thread
It is blackened, so of course I seasoned it, hard to get the right charring if I don't rub it first. I went with a homemade Cajun rub that was lower in sodium. I don't trim the fat off a rib eye because I like the way it cooks, plus if I did it might fall apart. No starch for dieting reasons.
Let me please reiterate, that Im not knocking your steak. It really does look awesome, but I think at this point we need to criticize the 2 to determine a winner.Comment

Re: Official OS BBQ/Grilling Thread
Lime juice, garlic, cumin (toasted and freshly ground), cilantro, mexican oregano, chili powder (aleppo), toasted onion powder, olive oil
I did have rice and beans, just didn't show it because the post was about the grill.
Rice I did my standard mexican-ish rice:
rice, chicken stock, canned petite diced tomatoes, cumin, mexican oregano, aleppo powder, diced onion, jalapeno halved
Sautee onion, add rice and toast a bit, dump everything else in and cook like normal.
Beans I do:
pinto beans, water, onions (halved), salt pork (what I posted that I made), garlic (roasted)
Brown salt pork, add halved onions, garlic, soaked beans, water
Cook until soft (I use my pressure cooker), remove onions, use immersion blender to half blend, so it's like very chunky refried beans, add salt.Comment
