Forgot to mention turnip greens. Snapped that picture of someone else's plate.

Definitely nothing wrong with gas grills as long as you know how to grill

But for me, I can't do gas, or lighter fluid anymore. Not sure if I'm spoiled, but I can definitely taste the difference between using charcoal and gas/lighter fluid.

I also feel that gas grills tend to dry out the meat, but again, it may be because of the person behind the grill and not what's actually in the grill.

I do think it's the person grilling (and the quality of the grill). At our old condo we rented we had a crappy community gas grill that only had "blazing" heat. No "low". It got so hot the handle was hot to touch when opening.

I couldn't keep stuff moist at all on that thing.

Now I've got a better (though still cheaper lol) gas grill of our own and it's much easier to keep things from drying out.

I cooked those porkchops on a home made gas grill with two heat settings and they came out delicious and juicy. If you saw this thing, you would ask exactly how old it is.

My dad is pretty solid at engineering some crazy home made stuff. We don't cook with gas much, but some really good food comes off of it sometimes.

I prefer the home made charcoal grill made out of solid Steel. Also have a grill at the lake house made out of an old propane tank and one made out of an older beer keg. My dad is def. The type of person who won't buy something if he cam build it.

Damn. I always forget about corn, but it is pretty amazing coming off the grill.

Gonna do some shrimp and chicken kabobs on the grill. Any recommendations? Never done kabobs before. Metal? Wood? What should I know? I was thinking a lemon/garlic seasoning combo for the meat.

Also, taking the woman to the homestead on Sunday and I'm playing chef. I'm gonna grill chicken with a peach-chipotle glaze and gonna do some cheesy taters on the grill as well. I haven't tried this glaze before but it sounds great.

Lemon Garlic sounds fantastic. I have never done wood, but metal seems to have worked well the few times my father did it.

I prefer metal because theyre reusable, BUT if you do wood, you need to soak them before you use them.
If you dont, they will burn up in the grill.
You wanna soak them in water for at least an hour or longer.

Usually you can go to your local grocery store, WM or HD and get some cheap metal skewers. Obviously be careful cuz they get hot!

I just cube up some boneless skinless chicken breasts, about the size of a golfball or just smaller..
Be careful if you are going to marinate them in oil. You need an oil with a high heat threshold. If you marinate them in regular cooking oil and the flame is too hot, you will actually fry the chicken and it will be as hard as biting into a cucumber. Not very appetizing. Olive oil is fine, just make sure there is no direct flame contact.

I'll probably create my own mango marinade.

                          I'm feeling creative

This isnt on the grill, but I'm working on making some homemade potato chips in the oven. Cut them up, put them on a cookie sheet, sprinkled salt on them, and now cooking them. Last time I tried this it was very inconsistent with burnt, done and not done. I tried to make them all the same width to see if that helps.

What type of veggies you guys like on your skewers ? I'm cooking for a few ppl so I can't go overboard. I'm thinking about doing bacon wrapped chicken, red/green pepper, and something easy like squash. I'm going to use a little garlic in my marinade so I can't use garlic and onion tends to be overwhelming.

Bought some metal skewers from Target, while running errands for work. Going to swing back by after work. Their produce and veggie section looks so much nicer.
