I'm thinking of doing some ribs or a brisket to kick off the CFB season tomorrow as well. Now to find a coax cable long enough to run outside so I can watch games while grilling.

Making some al pastore tonight:
Marinade (pineapple, chiles, achiote, onion, garlic, etc)

No smoke, just a long roast at about 300. No drip tray.
Al pastor is really supposed to be made like a gyro or shawarma, on a vertical rotisserie, etc. Just trying to get close at home. It'll be cut up, pieces put into a couple corn tortillas with some raw onion and cilantro. Still have a good half hour(+) left, but it's looking pretty good thus far, I'll go grab a pic.
It's pretty much right there, charcoal is getting low so I had to open my vents up pretty good. Give it a little more time make sure the center is tender/pineapple enzymes have had enough heat to denature.Last edited by Burns11; 08-30-2013, 06:53 PM.Comment

Final product in detail:
In a couple corn tortillas with raw onion and cilantro, with rice, beans, and some guacamole on the side.
If you were wondering about the rice:

1 lb of rice (2 cups), rinsed in a wire strainer until clear (need to get all the basically rice flour off the grains so it doesn't gum together)

One can of tomatoes, drained:

Add the tomatoes to the rice, to the juice you drained off I like to add some salsa liquid then round it off to 3 cups of liquid with water (rice formula is 2 parts rice to 3 parts water)

Add seasonings (chili powder, cumin, Badia complete), then put the lid on tilted, put on medium high until you begin to see craters in the rice (basically you'll start seeing the rice and it will have craters in the pan where the water is bubbling), then put it on lowest heat you can for 15 minutes.

Shrimp and corn on the cob. The shrimp I seasoned with a mix of paprika, cumin, garlic powder, and salt. In the future I'll use this seasoning for shrimp for tacos and Mexican dishes. Has a little taco spice to it.
For the corn I brushed on a lemon garlic based glaze that turned out alright. I'll have to adjust the garlic components in the future.
