    I haven't but I am thinking about building a wood fired oven from scratch.

            I'd be interested to hear too...might be willing to pick up a cheaper but decent one if it exists

              I use this for smoking.

              It is double pronged (one for the meat and one for the smoker temp). You can set alarms on both so you are notified when your cooking temp falls out of the desired range as well as when your meat hits optimal temperature.

              The range on the remote is decent as well.

              I think they have newer ones that you can sync your phone too, but this one works just fine for me.

                      Anyone have tip on how to keep the heat up on a Brinkman smoker? I've installed a better temperature gauge and drilled some holes in the ash pan but still have a hard time keeping a constant 200 to 210 degrees when smoking ribs. I have to keep adding wood chips/lump charcoal which will spike the temp. My ribs turn out well but sometimes I have to finish them off on my Weber grill or start them in the oven.

                      I know it's not the best smoker in the world but I got a cheap one to practice with. I've got my eye on a Weber Bullet in the future and plan on getting an electric one as well for jerky and bacon.

                        I tried to find an old thread where I had same smoker but did several mods to it for this very reason. A big one was oven door gasket rope installed along the lid to seal the giant air gap around the entire thing. Flap with holes drilled on top lid and same thing done under the base.

                        I'll continue to look and see if I can find my old post.

                          That's what I did. Bought some gasket rope and sealed it along the front and back of the lid. You have to seal both the top and the bottom to get it flush.

                          Also bought some fire-resistant sealer (I forget the brand name but the sealer is red) and filled all the holes around the grill. There are a ton of tiny holes in the smoker.

                          That being said I still can't get a perfect seal. The gasket wears away after a few uses.

                          Brinkmans are poorly built to be honest.

                            Didn't do much grilling or smoking this year but did a lot of baking.

                              Came home from work to this the other day. Don't care about the fence , but if you look to the far left, my poor smoker got wholloped! (shockingly my wife cared more about the fence)



                              Had to wait for pictures for home insurance but I went out to rescue and salvage what was was remaining of old smokey and I found it took the whollop well. Only the door was dented. The rest is fine. No one was hurt. it is a huge tree.

                                We had damage from a storm too...sucks with the deductible, but you can probably have part of that go to damage to the smoker and just fix it yourself too....

                                Grilling steaks tonight for my wife's birthday tomorrow (since it's a Friday in lent we can't do meat tomorrow).
