A friend of mine has one and swears by it. He has a Traeger, but I've seen some cheaper brands that look pretty similar at Tractor Supply, Home Depot. Amazon, etc. and I really want one for myself.

He admitted that he stupidly didn't clean his well enough and it caught on fire so he called Traeager and they sent him a replacement for free.

I got a Pit Boss Classic 700 on clearance from Walmart for $125 ($400+ MSRP). I've done my initial burn, looking forward to cooking something on it probably this weekend.

Cooked them at 250 for ~40 minutes until they hit 145. Then I opened up the middle of the grill (the Pit Boss 700 has a slide-open grate giving you access to open flame) and then hit 20 or so seconds per side.

Really good, but also first time using this rub (Famous Daves Rib Rub) which was awesome too.

A little under the weather today otherwise was going to get some ribs on this morning. Instead we're focused on getting the kids ready for the first day of school.

This is similar to what I did, but my grill is a little smaller, and my chops weren't thin pork steaks like what he had.

Fired up the smoker and the kettle Saturday for my father in law's birthday. He requested ribs. Did the ribs on the smoker with peach wood and did the flaps hot and fast with cherry wood on the kettle.

No pics of the finished product, didn't get chance to. But they were devoured and I had a million beers in the process, win win!!

Made ribs for the first time. It won't be the last. Gotta do this at least twice a month, simply amazing.

Did my first brisket flat on my Weber Smokey Mountain. It was a delicious meat and beer filled Saturday. Which has made for a very sluggish and hungover Sunday.

Sunday I had the family over and did some hickory smoked chicken using thighs and tenderized breasts. Monday for brunch I did homemade chicken and waffles. Sliced up a thigh, stuck it between two homemade pumpkin waffles, and bathed it in maple syrup. It was delicious.20190902_130610.jpg

My inlaws do a lot of cooking when they're here. They brought home a rib roast and said it was for me to cook. Never made one, turned out real good. Followed this recipe: https://heygrillhey.com/garlic-butter-smoked-prime-rib/

Last night I went to Costco and bought three 18 oz. rib-eye steaks and 10 country pork ribs totaling about seven pounds. I made a steak last night and this morning and plan on making all of the pork ribs tonight, but hot damn I am stuffed. Even if I make them, there's no way that I'm eating any tonight.

I bit off way more than I can chew, heh.

Testing out new recipes for my church's annual chili cookoff at the end of the month. I'm probably the only person thinking about this more than a day in advance, but I like to win...

Cut a chuck roast in half. Seasoned with Killer Hogs AP, The BBQ Rub, and some extra coarse pepper. Smoked for about 5 hours on a Weber Kettle. Threw in a pan at about 170 to catch all the juices starting to drip down. Pulled at 185 then cut into cubes and put in the chili. Was all beef.

I won it last year doing a straight ground meat (beef/homemade smoked pork sausage). It's in Texas so anything with beans aint gonna win. I think what sets me apart is using a couple different higher end chili blends. This stuff so 10x better than any type of chili powder I've gotten from a store.
