So living in NYC means limited space, however I was gifted an air fryer by my parents for Christmas, in which I’ve been using more as a grill/convection oven compared to an air fryer.
The girlfriend concocted a nice dry rub for some chicken breasts that had some kick and paired it with some brown rice and asparagus.
My next act is to make a nice beef brisket in the 8qt instant pot, which also doubles as a slow cooker.

Doing a thing tonight. Tomorrow is going to be yummy.
I've actually never done a brisket myself, only seen it done a few times and I'm not doing it how my father in law does it. Going the HeyGrillHey route and making it Texas style, so no marinade and not a ton of other prep. Trim season, get to temp, wrap get to next temp, rest and done.
We'll see if it's as easy as it sounds / looks.

Enjoy! Pellet grills are so easy. Just keep it clean, be sure to get the dust and remnants out from around the cup (where the pellets are burned) whenever you refill pellets.
Only issue I've ever had is I had damp pellets or something once, so after noticing the temp drop I went and looked and there was just a mountain of pellets in the grill because they weren't burning off in time and it overwhelmed the heating source.

Store bought corned beef turned into pastrami. I used AmazingRibs pastrami rub. For slicing sandwich thin it would have been good, but just easting like a brisket there was a bit too much pepper. It was still good, but I'd leave out half the pepper next time. Then shredded beef ribs that were like $2 in the manager's special box from 4-5 months ago.
It's official that beef rib is the best meat ever. These were low marbled individual dinky little cuts and they were still just so juicy.Attached FilesComment

Smoked a 12lbs turkey, did spatchcock so it got ready much sooner than I expected. Put the thermometer in and it was at 157 so took it out, wanted to take it out at 140 then put it in the stove at 400 to get the skin crisp. Using my Masterbuilt smoker and the highest temp is 275 which for me at least doesn't get the skin as crisp as it needs to be. I let the turkey sit in the fridge uncovered for 24 hours but oh well. I used my torch and it helped some but not enough. Turkey came out really good, I also injected it, went for the Cajun flavor was really juicy also, when I carved it off the bone there was plenty of juice, was really happy with it.
First time making a German Chocolate Cheesecake which turned out pretty good also.

Took me long enough but I finally got a Weber 22.5" charcoal. I thought I was gonna get rid of my gas grill but it's nice having both since the gas grill prep time is basically zero compared to getting a charcoal grill ready. Can't beat that charcoal flavor though.Comment

Instead of piling up the typical pyramid in the middle of the grill create an even stack to one side of the grill. Put your lid back on with the vent openings on the opposite side. Moderate temperature with opening of vents.

Mother Nature doesn't me to use my grill at all!
In late fall/early winter I heard something on my deck (where my grill is). So I peaked outside and noticed a possum trying to eat a bag of Miracle grow my wife had on the deck. After I scared him off he retreated to under the grill.
Fast forward a few months and I go out to throw something on the grill but for some reason it won't light (gas grill). I look under the grill and notice that my igniter switch was chewed through (damn possum).
It's now April and the replacement parts come in so I go out there to fix it. I open the hood and a damn bird flies out scaring the **** out of me. It flies away but it made itself a nest right on top of the crates. So I go ahead and order some replacement crates with a plan to clean the hell out of the grill.
The replacement crates come in so I get all of my cleaning supplies ready for a thorough a** cleaning. I take off the grill cover and damn wasp's nest falls out.
