And for the QB edits, are you talking editing things like pocket passer or scrambler? Those QB specific traits?

Yes, I'll link the video to the OP. Main thing is making sure any qb that has "pocket" as a style is changed to balanced and the scrambling archetype is the same rating as their highest archetype

However, on pro .. They do not. They Just keep dropping back further and further making for easy sacks. To fix this, qb edits are needed. I see where you put in “Ball Carrier Moves” where is this option exactly? I have yet to find it in this years or lasts game.

Its in visual settings i believe. I just copied and pasted my set up from last year over an changed things, if it's not in the game this year, I'll delete it from the OP, but i thought it was under visual settings
