Anyway, tonight's prep done:

Also prepped some pickled onions, basically a modified South Carolina BBQ sauce:

1c apple cider vinegar
1/3c dark brown sugar
1 tbs crushed red pepper
2 slivered dried peaches
1 heavy shot of applejack





Plus some pineapple-mango salsa (requested)




While making that, I thought about running up to the store and grabbing another chicken to jerk while smoking the other, just rub it down with this:

Yeah, I doubt I cook anything special since I'll be eating so much pulled pork during the week.

Edit: Oh, and those onions turned out pretty damn good. They did need less chili flake (I'm cool with it, but they were too hot for some). Overnight they pickled just enough to take away the raw onion bite, but were still crunchy, and they were a little sweet, a little spicy, a little vinegary, awesome on a sandwich.
