Steve took care of it. I'll be on top of most things, but I know OS benefits from having individual threads for big news so I didn't want to take that away. It was added to the OP though.

Players on the in-game menus are not pre-set. They will be from whatever team you select as your favourite.

Goalies are officially on the backburner. From a GameChanger (B-Bunny, EA Forums mod):

The beards and stuff comparisons doesn't mean anything because it's a totally separate team working on that than the guys who would be working on the goalie stuff. We need to learn to separate the art team from the gameplay team. Then you can consider that the gameplay team spent most of their time doing this and that, not playoff beards and arenas..

That being said, they wanted to do something with goalies. They still may, just a matter of if they have enough time to do so this year or not. That's why you haven't heard anything.
