Been tempted to look into the Ion drum set since I'd actually like to learn real drums.

I'm in the same situation. If you have a macintosh, you don't need the drum brain, because you can hook the drums directly into Garageband.
It's funny, some people have said that playing RB drums isn't the same as playing real drums. This is a mental block they are putting on themselves. Either that, or they have terrible technique when they play Rock Band. Drum teachers tell their students to practice patterns on a drum pad. How can a drum pad help you play real drums, but four drum pads not help you?
Doesn't make sense. As long as you play with bounce in your stick strokes, you're learning real drum technique. If you're 5 starring songs on expert, it'll probably only take two weeks to translate that onto a real drum set while you get used to the new spacing and bouncier surfaces.Comment

Yes, but I wonder if that will help you be able to create your own material. I mean now you know how to sync n' sway, but unless you're paying really good attention to the songs, does it really help you know what each pad means, how/when it should be used in real songs, etc? I mean I know it definitely helps you acquire the drummer skill, especially with separating your hands and feet and coordinating spectacularly with both... but I just don't know if it really is the steppingstone for one to say they are sufficient on a real drum set.
But maybe it is, you know? I really don't know, I've only played the game once and it was for < 30 minutes. Not only that, but I've never touched a real drum set in my life. I'm not sure if I'm more than capable of adapting to a real drum set after five-starring songs on Rock Band. I've been playing drums since I was 13 and I'm 20 now. You make a good point, Rockband will help someone get acquainted with a drum set. Meaning the very basic skills, but being able to actually play a beat and know when a fill will fit is another story.
The thing I always look for when I seen someone playing Rock Band drums is what they do during the fills. Most people make it sound awful. Drummers will make it sound awesome.
I think people who've been five starring the game need a sit down with a drummer to discuss theory just once. Either that, or they need to really pay attention to their favorite bands to see what real drummers do. It's really baffling hearing some of these guys play during fills. They spend 85% of the song mimicking a real drummer, and then do something completely the opposite when it comes time to do a fill.Comment

Since most of you guys already have the instruments, which "pack" would you guys recommend? Will each set work with both games? Which pack has the better quality of instruments? Etc.

I'd get the Guitar Hero set. I've always preferred the GH guitar over the Rock Band one. Just something about the strum bar on the Rock Band guitar never felt right. Plus the drum set that comes with GH:WT will also have the cymbals, with Rock Band you'll have to buy those separately as an add-on.Member of The OS Baseball Rocket Scientists AssociationComment

I'm pretty sure they will both work for each game.
EDIT: Not entirely sure. This article on Kotaku said that GH:WT will be compatiable with with non-Guitar hero instruments.
