I am on Chapter 6 and free roaming some more.
Out hunting Moose right now and just exploring.
I simply love doing this.
I have taken the Jerimiah Johnson route in terms of survival in the wilderness.
Funny I was way to the left on my honor meter before chapter 6.
But then things changed.......

Does the quality of animal improve as the game progresses?
I'm on my second playthrough, still early in Ch. 2. I've shot upwards of 20 rabbits with the varmint rifle (often aiming for head, sometimes not) and I have zero perfect skins so far (for the hunters challenge).
Assuming I'm just bad at hunting rabbit, does anyone have any tips on this front?Comment

No, quality doesn't change as you progress - you can find a 3 * deer at the beginning of the game just as easily as at the end. There's two important things you need to do to be able to hunt effectively though.
1. Study. Get at least somewhat close to whatever you want to hunt, raise some kind of weapon aor binoculars and hold R1 for a second or two. That will give you detailed info on an animal species as well as be able to identify their tracks in Eagle Eye mode (L3+R3). When you look at an identified animal, you will be able to see their quality as 1 to 3 stars. This needs to be a 3 before you ever start shooting to be a perfect pelt after you kill it, and 3's aren't really as uncommon as people think (they weren't for me, at least). Studying also gives info on the other part of successful hunting:
2: Clean kills. You really need to be able to drop your target in one shot, and with a specific weapon. For example small animal like rabbits, squirrels etc. can only yield a perfect carcass if killed by a varmint rifle. The study info window will tell you what weapon you need for a clean kill.

I'll spoiler tag because it can be picked up and learned on your own (and I don't want to deprive people of that experience because it was enjoyable for me to learn it), but this is just gameplay mechanics stuff, nothing more:

I picked up on the study element partway through my first playthrough and it made hunting a lot more strategic and rewarding. I have also been using the varmint rifle exclusively in my rabbit hunting.
That said, the issue I'm having with rabbits is their, um, squirrely nature. Their movement is so sudden and jagged and their appearance so random that I often find myself shooting as they come to me and before I lose sight, as opposed to being able to stake out a location and secretly wait for their arrival.
I don't know. I achieved this hunter challenge the first time around but it took me way longer than I imagined it would. Now it appears I'm heading for the same long-term fight. Is there any kind of bait that people have used they found effective? Or any other strategies?Comment

In addition to this, kill the legendary buck and craft the Buck Antler Trinket at a fence. This gets you higher quality pelts. I don’t think it works every time, but I know I’ve skinned 2-star animals and gotten perfect pelts off them. I think it still has to a one-shot kill on a 3-star but not necessarily a clean kill? Could also be random, I’m not sure.
And don’t forget to use your Dead Eye on the small animals to get head shots. It helps once you get the Dead Eye where you can mark the shot instead of it automatically happening. You get that once you do a certain story mission. Later you even get a Dead Eye that marks where you can get a clean kill in red.Comment

FINALLY got the game! Just finished Chapter 1, and boy I can tell this is going to be a ride. My wife even watched the entire time and was sucked in asking questions, haha.
