    Did you do the rice yourself? I need a good (easy) mexican rice recipe.

      Everyone really enjoyed it. If you look at my pics, youll see I have some of those small Glad containers.
      I just has everyone fill one up with whatever they wanted in the Quesadilla.
      I put all their ingredients in the tortilla, folded it over and toasted it up on the grill.

      They were perfect!

      I did not do the rice. Someone brought that.
      Honestly, I usually do the boxed rices. I aint got time for all that.

      BUT, FoodNetwork.com has some great Spanish Rice recipes if youre looking for doing something yourself.

      The Meats I seasoned with my own fajita seasoning with S&P, chili powder, onion powder, garlic salt, cumin, paprika & cayenne.

      I used this seasoning for all the Meats, the Onions & Peppers and even the Cheese.

        We have a rice cooker that we never use. The boxed or instant rice microwaves so quickly and tastes fine to us that we really don't care.

        Time is more beneficial to us. If we had to make tons and tons of rice I may consider the cooker, i dunno.

          I think its Uncle Bens that has the rice in a pouch that you pop in the microwave for like 90 seconds. Works for me!
          I dont mess with handmade pasta or rice. Too time consuming.

            If I could find premade rice that tasted like the stuff in the local restaurants I'd be good to go, but I've not found one yet. I do like the Knorr (Lipton brand) side rices/noodles. I actually had some mexican rice last night with chips, salsa, chopped tomatoes, and onions. Pretty good.

            Typically I'll mix Uncle Ben's brown rice with a can of black beans and season it with cayenne pepper, glove of garlic, some cilantro, and its simple but pretty damn good - especially as a substitute for the rice in the above paragraph.

            Its just been something I've been wanting to try and make myself.

              You could always ask that local restaurant to buy some of their rice.
              Many restaurants cater and would be willing to sell you just that.

                Our rice cooker turned me into a rice snob. The stuff that comes out of our is fantastic.

                  A few nights ago I did frijoles borrachos, spanish rice, and grilled boneless chicken thighs that I marinated in Chili powder, cumin, pineapple juice, cilantro, lime juice, and fresh oregeno. I made the beans and rice from scratch. I just can't do boxed rices and canned beans.

                                Weber and their customer service continue to impress me. The ash catcher assembly is broken on the unit I bought off of CL yesterday. So I called this morning to see if I could order just that piece and they're sending me the entire ash catcher assembly, pan and handle free of charge.
