    We used something similar for Thanksgiving two years ago and it took forever. We ended up going back to the oil deep fryer. I will say the turkey turned out great....however took a lot longer than it should have.

    Typically we eat around 3-4 between the football games. That year we ate at 6, so clearly it took longer than normal.

              Marinated in olive oil and Montreal Steak Seasoning over night.

              Day of, used hickory wood chips to smoke it and then wrapped it with butter, brown sugar and honey.

              Again, not to take credit from my wife, she made this. It's her dad's recipe. She does brisket and steak, I do the pork, burgers and most everything else.

                Bought a starter smoker. The Oklahoma Joe. Still need to get mods for it and find a cheap wood supplier.

                  Nicely done! Like I say when I take meat off the smoker, if it looks like a meteor, you did good! Looks great

                        Was really good, I usually sale my cheesecakes according to what someone wants 30-40$ This one is going for 50 if anybody at work or around wants me to make it for them and I have a couple orders for it already.

                              Did my first solo smoke this past weekend. I cheated a bit.

                              Did a half pork butt for 18 hours sous vide and then smoked for about 75 min. Also did two whole spatchcock chickens, and some homemade sausage. Turned out pretty good!

                                That's interesting to hear that worked out. Usually it's smoke then finish cooking but you cooked then smoked. I guess because of the nature of sous vide the meat doesn't really form a shell and is still "porous" enough to accept the smoke?
